Ube (or ubi) is the Filipino word for purple yam (Dioscorea alata). It is cooked with sugar and eaten as a sweetened dessert or jam called ube halaya, which is a bright violet color. Ube is also an ingredient in the popular fruity dessert halo, halo. Ube Extract, Natural & Artificial can be used in a variety of desserts including Swiss roles, tarts, cookies and cakes. It has a nutty flavor with a coconut-like background note. This flavor does not contain any added purple food color. Ube Extract, Natural & Artificial can be used in conjunction with natural or synthetic water baaed colors if a deep purple color is desired
